Midweek Morsels: Chicken Enchilada Soup



I forgot a Midweek Morsels recipe yesterday, so here's a recipe today. Kristina's suggestion for this week is soups. Here's one of my all-time favorites:





Chicken Enchilada Soup

4 cans canned chicken (12.5 oz. size)
1 can white beans (48 oz. size)
1 to 2 medium onions, chopped
4 garlic cloves, minced
1 T olive oil
2 to 4 cans chopped green chiles (mild)
1/4 t. cayenne pepper
6 cups chicken broth
2 t. ground cumin
1 cup shredded monterey jack cheese



Cook in crock pot 5 to 6 hours on low. Serve with tortilla chips, cheese, avocado, sour cream and cilantro. Yummy!

It makes quite a bit, so alter as necessary for your needs. I've cut it in half and it's plenty for my family.

    But I don't think I can find monterey jack cheese, u think mild cheddar would do? I have no idea how it tastes.
    Also, we don't get canned chicken. can I just use chicken fillets?

    Valentina: Yes, any kind of cheese would work, in fact when I made this the other day I used Cheddar. As for chicken, if you don't have canned, just cook and cut up chicken pieces and add with all the other canned stuff. I think the recipe uses canned just to make it insanely easy. Good luck!

  5. I just wanted to let you know that I totally made this soup today for lunch when I had several people over at the house. They all asked for the recipe, it was delicious. We just finished it off for dinner and Taylor says it's a keeper! I totally forgot to add the green chilies, but will next time. I also didn't add much cayenne pepper because of the small kids. We topped it with santa fe style tortilla strips and added lime to it. It didn't say in the recipe but I sauteed the onions and garlic in the olive oil first with the cumin. I also imagine that the chicken would be really good if you just picked up a rotisserie chicken and shredded it in. Delicious! Thank you!
